You all know how I am.  When I have too much to talk about, I resort to the number system.  So without further ado...

  1. Joey survived his first day of the Academy.  It was not without much yelling, running, hundreds of push-ups, more yelling, a call to the EMS (thankfully not for Joey), a little hazing by the senior academy class (all in fun, though), and of course, more yelling.  Needless to say, he was exhausted.  After a birthday dinner at his grandparents, he spent the rest of his evening shining his boots, icing his knees, and bathing in Epsom salt.  He passed out before the Dallas game was even over.
  2. Speaking of birthday dinner, Joey's grandparents made me a fabulous catfish dinner.




    Catfish, broccoli casserole, homemade macaroni and cheese, homemade gumbo, and sweet tea. YUM!

  3. My mom took me to lunch yesterday for my birthday and then we went to the mall for a little shopping.  I bought THE cutest sweater at Banana Republic, I'm just wondering if it will ever get cool enough to wear it.  Darn this South Texas weather!!
  4. In case you're wondering, I love Kidd Kraddick in the Morning.  Totally cracks me up.
  5. Although I'm sad for Caroline at PD&PB, my dear Carolina Panthers fan, I'm ecstatic that the Cowboys pulled it together and got not only their first sack of the season ('bout time!), but 3, count 'em THREE take-aways!!!  I'm still not impressed with our tackling abilities.  I mean, my children tackle better than the Cowboys are right now.  Seriously!!!  Wrap 'em up!!!  Either way, though, I can tell you, when you're an NFL quaterback, this is not what you want to be looking at...





    I love me some Ratliff and Ware, baby!!

  6. I have so many new shows on my DVR that I'm dying to see, but just haven't the time to watch them.  I can't wait to see the season premiere of Desperate Housewives.  Love.Them.  And since Joey will be super busy for the next 7 months, I'm planning on DVRing all the shows that I've always wanted to see, but never really had the time since we compromise with shows we both like.  YAY for DVR!!

Normally, I would not get up at 5:30 am on my birthday, but today is clearly one of the most important days in Joey's life, so I did what any loving, extremely proud wife would do... got up ridiculously early and made him a yummy breakfast!  After all, I couldn't send him off to a minimum of 4 hours of straight PT without breakfast, right?



BTW, in case you've forgotten his name, it will forever be on the front (and back) of his shirt.  And has anyone seen my hubby's hair?  I can't seem to find it...

After breakfast, it was time to get dressed.  He had all of stuff packed and ready to go, so once he was dressed, it was time for all the good-byes, good-lucks "I love you's".

Funny story... When we walked Joey to the truck, Taylor said, "Daddy, you know what's not fair? When we went to dinner with Mawmaw and Pawpaw there were two cops there and they had hair! But you're not allowed to have hair!  That's not fair!!"  Joey assured him that when he graduates, he'll be growing his precious hair back.

And for those of you who may be counting, I only teared up slightly as he pulled out of the driveway, and only once or twice as I typed this post.

I'm praying for you baby.  I know you're doing great... and enjoying every minute most of it!

Monday evening I went with Joey to the Academy orientation.  Let me set the stage: We walked in to a completely quiet room halfway full of extremely nervous, well dressed men and women.  At exactly 10 seconds before 6pm, 4 high ranking police officers entered the room.  At exactly 6 o'clock, they began their very strict presentation, only stopping to reprimand the 3 people the walked in late - 3 separate times.

I thought I was going to wet to pants.  Those poor people!

When the orientation was over, I needed a stiff drink.  I was a nervous wreck!  Joey, on the other hand, was pumped out of his mind!  He loved every second of it.

And I love him.  Every bit of him.  Even though there's a little bit less of him now.



He's spent the entire week getting his uniforms ready, purchasing all of his gear, and getting prepared for Monday. It's going to be seriously intense, but he's as ready as he can be.

And I'm so proud of him.

Joey, I love you more than you'll ever know.  Good luck, and never forget how you got here.  When times get tough - which they will - God will sustain you.

Need a quick easy main course? That's what I always look for in a recipe. If I can't read the ingredients, or don't know what they are, I don't even give it a second look.

Last week I made this for the family. The kids loved it, Joey loved it, I loved it! It was a hit, all the way around.


Porcupine Meatballs

What you need:
  • 1 lb. ground turkey (or beef, if you prefer)
  • 1 cup instant rice
  • 2 large eggs
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • your favorite BBQ sauce
How to make it:
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients except BBQ sauce in large bowl.
  3. Create meatballs approx. 1-2 inches in diameter and place meatballs in greased baking dish.
  4. Cook for 20 min.
  5. Turn meatballs and top with plenty of BBQ sauce and continue cooking for 5-10 minutes.

Most everyone knows that I'm a child of God.  Those that know me personally also know that I'm a singer.  When you put these two things together, you get a girl who loves to worship God through music.

Music speaks to me, moves me, changes me.

Over the past few months, it's been clear that God was working.  Last week at church, our pastor talked about how God is in control.  He asked the question several times, "Who is in control of your life?"  He spoke about the destiny that God has created for each one us, even before we were born.  He reminded us that when we allow God to be in control (because we know that God gives us the choice), this destiny that he has predetermined for each one of us, can't be thwarted.

I can't tell you how amazing it is to see God working all around me, for my own benefit.  I see God working frequently, but you know how sometimes you see it more when He's doing something in someone else, rather than in yourself?  Over the past few months, God's love has been right in front of me.  He's been working on my behalf and on Joey's behalf to fulfill His plan in our lives.

Answered prayer after answered prayer.  Blessing after blessing.

As I said before, music moves me.  The song that seems to have been the underscore to all of these answered prayers and blessings is a song by David Crowder called "How He Loves".  I can't get a way from it.  I heard it live on the radio just this morning.  I think God is trying to tell me something...

Google it.  Listen to it.  I don't think there is any better song that describes just how much God loves us.

I've been hinting for months that there was something big going on in the Gorena household.  Today, I can finally let you all in on the secret.  A week from Monday, Joey will be making a significant career change.  He starts the police academy and in 8 months, he'll be wearing this:



This is something that he has wanted to do for a long time, but unfortunately, it just wasn't the right time until now.  I've said it before, and I'll say it again, Joey is one of the hardest workers I know.  For the last 10 years, he's done everything he could do to provide for our family - including placing his dreams on hold. 

About 6 months ago, he approached me with this dream.  After I bawled like a baby in the middle of a restaurant, I began to pray.  God answered my prayers by giving me peace that only He could give. This has been an extremely long, difficult process and we have covered it in prayer.  (My prayer?  "God, if this is not Your will, please close the door.  If this is Your will, please make the process go smoothly.")  It has been absolutely amazing to see God work out every last detail.  There is no doubt in my mind that this is exactly where God wants us.

I've never seen Joey more excited or passionate about anything (other than me, of course).  I'm so proud of everything he's accomplished in the last 6 months and can not wait to see everything that God does through him.

Baby, keep following your dream.  You know you have my support and prayers always.  I love you more than anything and I'm so happy to be on this journey with you.

OH. MY. GOODNESS.

This stuff is so good. And I'm convinced that there is now more Fall-like weather in San Antonio simply because I cooked this last weekend. Just something about pumpkin-smelling anything, right? YUM!

Please note:  I can not be held responsible for any addictions or weight gain that may occur from the making of this recipe.  You've been warned.

Pumpkin Bread (recipe from my good friend, Kelly)

What you need:
  • 3 1/4 cups flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 3 cups sugar
  • 1 can 100% pure pumpkin (not pumpkin pie mix)
  • 2/3 cup water
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups chocolate chips

How to make it:
  1. Preheat oven to 350 degrees.
  2. Grease 2 large loaf pans or approx. 7 mini loaf pans.
  3. Mix dry ingredients (except chocolate chips) in large bowl.
  4. In a separate bowl, mix pumpkin, water, eggs, and oil. Add to dry ingredients.
  5. Add chocolate chips. (I usually make half with and half without, so I'll pour the "without" into a pan, then add only 1 cup chocolate chips, stir, then pour in the remaining pan(s).)
  6. Bake 45-60 min.

I know that chocolate and pumpkin may throw some of you for a loop. It did me... until I tasted it. It is so good! I make half without because Taylor doesn't like chocolate, but he devours the non-chocolate loaf!

Movie Etiquette 101

This weekend Joey and I went to the movie, as we often do. We walked into a sparsely occupied theater and chose our seats right in the middle.

As the theater began to fill up, 4 people walked into our row, with the 4th person sitting right.next.to.me.

I turned and gave Joey the look, and he just smiled.

Why were these people not able to leave the mandatory 1 seat space between people you don't know at the theater? Were they unaware of movie etiquette? There were at least 5 seats to my right - more than enough to leave the mandatory 1 seat buffer.

Joey kept telling me that we could move down 1 seat, but I didn't want to be rude. I kept saying I would move when the lights went down, but the theater was slowing filling up.

So I made my move to the other side of Joey. Ahhh... personal space.

Then another couple came and sat right.next.to.me. It was hard for Joey to control his laughter.

I resigned myself to the lack of personal space and settled in to watching a good movie. Then it happened. The stink of bad breath wafting right into my nostrils.

UGH!!

I asked Joey if he smelled it, and he didn't, which led him to believe it was him. Which it wasn't.

It took every bit of restraint I had to keep from politely offering a piece of gum to the guy sitting next to me - and the people behind me. Surely these people had friends to tell them to stuff it with gum! Why were these friends intent on making my movie experience hideous?

I guess, as Joey said, now I have something to blog about.

So there you have it. Movie Etiquette 101. Don't say you didn't know.

Last Sunday evening, I pulled out one of my favorite recipes and cooked dinner. (Are you guys freaking out yet with all this cooking I'm doing? My family sure is!) This is so good right out of the oven, but also really good as leftovers for lunch the rest of the week.

I'm a sucker for Mexican food - I could eat it all day everyday - so if I can cook it for dinner, as well as take it in my lunch for the rest of the week.... mmmmm, that's my kind of dinner!

Chicken Enchiladas

What you need:

  • 2 large boneless, skinless chicken breasts (if they're small, use 4)
  • 1 8 oz. package of cream cheese
  • 8-10 tortillas
  • 1 can Old El Paso Green Chile Enchilada Sauce
  • 1/4 cup Rotel
  • Knorr Chicken Bouillon
  • Shredded cheddar cheese

How to make it:

  1. Preheat oven to 400 degrees.
  2. Trim fat from chicken breasts and boil until cooked through. Add chicken bouillon to boiling water to flavor the chicken. (Just toss some in... maybe 1/2 T? I don't measure, I just sprinkle.)
  3. When chicken is cooked, remove from water and cut into bit-sized pieces.
  4. Cube cream cheese and melt in large skillet over low/med heat.
  5. Add the cut chicken, Rotel and liquid (less if you don't like it too spicy, more to add a little kick), a couple spoonfuls of the enchilada sauce to the cream cheeses and stir to create a creamy mixture.
  6. Fill tortillas with mixture, add shredded cheese, roll and line them in a greased glass baking dish.
  7. Once all mixture has been used, pour remaining enchilada sauce over the top of the enchiladas and cover with shredded cheese.
  8. Bake until cheese is melted and bubbly (approx. 15-20 min.).

Spanish Rice

What you need:

  • 1/4 white onion, sliced into small strips
  • 1 cup instant white rice
  • 2 cups water
  • 1/4 cup Rotel
  • 1 Tbsp. Knorr Chicken Bouillon
  • 1 tsp. chili powder
  • cooking oil

How you make it:

  1. In large skillet, add a dash of oil, onion, and rice. Saute over medium heat until onion and rice begin to turn brown. (Don't burn it!)
  2. Add water, rotel, chicken bouillon, and chili powder.
  3. Bring to boil over medium heat, stirring occasionally.
  4. Reduce heat to low and simmer 20-30 minutes, or until all liquid is absorbed.

And here's your dinner. YUM-MY!

First of all, #6 from yesterdays post? Yeah, we got the good news we've been waiting for. (More on that next week.) Thanks to everyone for their congrats on Twitter! There's a story behind it all, which I will share - it's killing me not to share it now, but next week, I promise!

Now, on to my hubby. Have I mentioned how much I love Joey? Yeah, I do. He is absolutely the best husband and father and I am blessed beyond everything I could have imagined. He is, and always has been, such a hard worker. He has always done whatever he had to do to provide for our family and I am so proud of everything he has accomplished.

One thing I love about him though is that no matter how hard he's working, he usually has time for this:

Basically, he's just a big kid. :)

I wish I would have videoed this little exchange, but believe me, I'll have plenty more opportunities. Joey and Taylor have an entire dialogue that they go through and then they fight like crazy. It's fabulous to watch.

Then Joey, being the wonderful husband that he is, convinced me to play light sabre wars with Taylor while he cleaned the kitchen after dinner.

I believe this picture is right before Taylor tried to cut my leg off with his light sabre.

I obviously need more practice because had I been able to block that strike from Taylor, I may not have a nasty bruise on my leg right now.

Maybe I'll just leave the light sabre wars to Joey. He really seems to enjoy it.

So I guess I'll just use the trusted number system.

  1. Thanks to everyone who's complimented the new Cowboys blog layout. I can get a little obsessed this time of year.
  2. Taylor was "chosen" to move out of his kinder class into a new class due to overcrowding. He was really not happy about this (since he LOVED his teacher) and therefore I was not happy about it either. I was prepared to throw my own little tantrum in the Principal's office until she agreed to let him stay, but it turned out to be unnecessary. Taylor loves his new teacher and is doing great. I guess I'll reserve that tantrum for the next time they try to jack with my baby.
  3. This morning it took me 20 minutes to drive approximately .5 miles. There was no rain, no wreck, just stupid people. I may petition to have half of the citizens of my city removed. I'm not sure where they came from, or who told them they could come, but I was here first and they need to leave.
  4. I got a flu shot yesterday and about 2 hours later felt like I had been hit by an 18 wheeler. What the heck? My arm still feels like I spent the better part of yesterday doing one-arm shoulder raises with a 200 lb. dumbbell.
  5. After I received said flu shot, I re-buttoned my cropped sweater crooked. Did anyone tell me? No. Did I wear it like that for the remainder of my work day? Yes. Please tell me why.
  6. I'm hoping for some good news today. You can hope with me.

I'm thinking of turning over a new leaf.

It's no secret that I'm not the best cook, but lately I've found some recipes that I've actually made and the family has enjoyed. It's a miracle, yes, but hey, I'll take what I can get.

Yesterday I tried a recipe that I found on Kraft online. Here's the 411...

Slow-Cooker Lasagna

What you need:
  • 1 lb. ground turkey (recipe calls for beef, but we always use turkey)
  • 1 jar (26 oz.) spaghetti sauce (Next time, I'll use more sauce. It was a tad dry.)
  • 1 cup water
  • 15 oz. ricotta cheese
  • 2 cups mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 Tbsp. chopped fresh parsley (I didn't have fresh, so I used dried.)
  • 6 lasagna noodles, uncooked
Make it:
  1. Brown meat in large skillet. Drain.
  2. Stir in spaghetti sauce and water. Simmer.
  3. Mix ricotta, 1-1/2 cups mozzarella, 2 tbsp. Parmesan, egg, and parsley in a bowl.
  4. Spoon 1/3 of meat sauce into bottom of slow-cooker.
  5. Layer noodles (broken to fit), cheese mixture, then meat. Repeat.
  6. Cover with lid and cook on LOW 4 to 6 hours, or until liquid is absorbed. (Mine only took 4 hours, so don't over cook.)
  7. Sprinkle with remaining cheeses (however much mozzarella and Parmesan you like) and let stand, covered, until cheese is melted.


Amazingly enough, my family loved it (it was really good, and super easy!). I put it in the slow-cooker before we left for Sea World for the afternoon. When we got home - hot, tired, and HUNGRY! - it was ready. That's my kind of dinner!

First of all, I feel the need to point out that my husband rocks every week, even when I don't make a formal post out of it. Sometimes he gets his feelings hurt (because he's sensitive, remember?) when I don't tell the world wide web about how much he rocks, so for that, I must apologize.

Now, on to why he rocks at this immediate moment: As you may know from yesterdays post, my hair has been sucking like a vacuum lately. I thought it was the change in weather, or the fact that my birthday is coming, so things are bound to begin to fail me, or maybe my hair has just loved me for too long and now it's just simply had enough.

So as I was cursing the hair gods in my head this morning (and some out loud), Joey walked into the bathroom with a wealth of knowledge that if I had even one brain cell in my tiny little head, I'm sure I could have come up with on my own.

What was this knowledge, you ask? Are you sitting down? It's good....

"You changed your shampoo, babe. Maybe that's it."

It was as if a million light bulbs turned on in my head all at once. This, my friends, is why God created marriage. When I am dumb, my sweet husband is brilliant. (And no, I'm not being sarcastic. I'm totally serious!) Why had I not thought of such a simple solution to the hideous mop that has been adorning my head?

I thought of calling in sick to work so I could go to the store, buy my trusty shampoo that has never failed me, re-wash my hair, and start fresh, but I didn't. After all, it's Friday and there's no one at work so I'll just pull my hair into a ponytail (right, Megan?).

Oh how I love my hubby. Thanks, babe, for solving my hair trouble.

Now, in other news, I tasted the Pumpkin Spice Latte this morning and my mouth (and hips and butt) will never be the same.

I don't like pumpkin pie, so don't judge that it's taken me this long.

It all started last night when this little guy, cute as he may be...

... after several chances to make the right choice, unfortunately broke my heart and chose to be grounded tonight. That did not make for a good remainder of the evening.

And unfortunately, again, said cutie pie woke up in just as bad of a mood as he went to bed in and this morning was no better, resulting in another broken heart by Momma from more poor choices by this guy.

Please tell me I'm not the only Momma out there who goes in the bathroom and cries when she has to discipline her children?

Anyway, back to my terrible, horrible, no good, very bad day.

The dog (Layla) woke me up with her endless barking.

My hair looks horrible.

My outfit is bad.

I didn't have time to eat breakfast.

I have to work through lunch (and have no work to do).

I hate, absolutely hate, the fact that my baby will be spending the evening in his room instead of playing outside with his friends and this will, inturn, make me sad the entire day. (I do, however, take some comfort in knowing that it is absolutely necessary for him to learn the consequences of his actions and would rather that I be sad than to have him grow up without learning this valuable lesson. *sigh*)

I wish I had stayed in bed.

Last week, if you remember, I cooked. And no one died.

But before that, I had cooked something else that we hadn't yet eaten. It was a special something that was waiting for my dad and my Mama (his mom) to come for dinner on Friday.

It was special because it's called a Dr. Pepper Cake. And anyone who knows my family knows that we're a Dr. Pepper family. Of course, all of us (except my Mama) drink Diet DP now, but when I found this recipe, I had to make it before Mama headed back to Amarillo.

So here it is, in all it's glory.

And let me tell you, it is the yummiest cake I have ever put in my mouth. Seriously.

Here you go, the fabulous, worth every dimple on your thighs (altered slightly) ...

Dr. Pepper Cake
  • 1 cup butter
  • 1 cup Dr. Pepper soft drink
  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • pinch salt
  • 4 tablespoons cocoa
  • 2 beaten eggs
  • 2 teaspoons vanilla
  • 1/2 cup buttermilk
Directions:
  1. Preheat oven to 350 degrees.
  2. Melt butter.
  3. Add the Dr. Pepper and stir well.
  4. Mix all of the dry ingredients together in a large mixing bowl.
  5. Add the eggs, buttermilk, and vanilla.
  6. Pour the Dr. Pepper mixture over the rest of the ingredients in the mixing bowl and mix well.
  7. Bake at 350 degrees in a greased 9x12 inch pan for 30-35 minutes.
Dr. Pepper Frosting
  • 1/4 cup Dr. Pepper soft drink
  • 1/4 cup butter
  • 3 tablespoons cocoa
  • 3 cups powdered sugar
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla
Directions:
  1. Heat Dr. Pepper, cocoa, and butter, but don't bring to a hard boil.
  2. Stir in remaining ingredients and mix well.
  3. Spread Dr. Pepper frosting while cake is still hot.
